In three more days I will have completed my first year of teaching. Yahoo!! On one hand, I'm totally ready for a break. Momma needs some quiet time. But, on the other hand, I have the teensiest bit of anxiety over my daily routine changing so drastically and so quickly. One day I'm waking up at 6:00 a.m. and packing my lunch and preparing my lesson and filling with a tiny bit of dread at 8:59 and then giving the same speech 3 times and then giving a different speech 2 times and then putting in my attendance and then driving home while marveling at time's ability to keep moving forward... just like I did for the past 200ish days before this one. And then the next day all the sudden I don't have to do any of that stuff for a long time. It's weird!!
I still have a lot on my plate this summer, and I'm actually glad for it. I don't like having too much free time... it makes me lazy and cranky, two things you do not want me to be. I'll be taking one of my final classes for grad school and nannying three days a week. And I guess also obsessing over my bachelor bracket, but really who WON'T be doing that!?! amiright ladies?!
This post was born out of reminiscence of my college days, when everything I ate took less than 10 minutes to make and cost less than $2 a serving. It's actually kind of funny because the day that I started the grad school class I'm finishing this summer, I did a few short assignments and immediately had a hankerin' for some teeny tuna melts. It's funny how our memories and actions can bring on a craving for a meal you associate with that activity. For me, college = microwaved cheese and tuna. Huh. This little snack is actually really delicious and extremely easy to make. I'll give you my favorite recipe for tuna salad, but I bet that your recipe for tuna salad would be just as delicious smashed between a layer of cheese and a Ritz cracker! P.S. cats love tuna and approve of this recipe, as evidenced by the picture below.
Teeny Tuna Melts
Time: 5 minutes
Serves: one hungry college student or lazy post-grad
12 Crackers of any sort (I used Ritz)
Sliced or shredded colby-jack cheese
1 can tuna
1 tbsp capers
1 tbsp mayonnaise
salt and pepper to taste
1 pinch of dried dill weed
1. Open and drain the can of tuna. Dump meat into a bowl, add mayo, salt, pepper, capers, and dill and stir until combined
2. Place 12 crackers on a microwave safe plate. Distribute tuna mixture evenly between the crackers with a spoon. Top each cracker with sliced or shredded colby-jack cheese.
3. Microwave on high for about 1 minute, or until cheese becomes melty and the tuna is heated through. Let cool for 1 minute (or risk the certain pain of lava cheese on the roof of your mouth). Eat immediately while the cracker is still crisp.
