I Made the Granola

On Tuesday, I crossed something huge off of my bucket list: make granola. That doesn't seem super exciting, BUT IT IS! I have been writing "make granola from scratch" on my list of goals for 3 YEARS now. Why did it take me so long, you ask? Laziness.

So I did a little research on granola making, since it was on my list of future food, and discovered that it is stupidly easy to make and that I already had all the ingredients. I poked around a few recipes, got a general idea of what I was supposed to do, and just went for it. The finished product- glorious. Perfectly crispy, crunchy, and toasty. The oats stuck together really well and I got some good cluster action, although it did take a little forceful breaking. I chose to use honey as the sweetner and coconut oil as the oil and the flavor was really nice... sweet but not too sweet. But you could use any liquid sweetener and any oil, depending on the flavors that you like.

One thing you should know... I don't like measuring. Therefore, this recipe can never be exactly recreated. But I can give you the gist of it. In reality, you do not need to follow a recipe to make granola. Find whatever granola-y stuff you have in your pantry, throw it in a bowl, out it in the oven and eat it. THERE ARE NO EXCUSES.


prep time: 5 minutes

cook time: 20 minutes

serves: 3-4 cups ( I think)


plain oats (about 2 cups)

walnuts, hazelnuts, and flax seeds (about a cup of all combined)

salt (a sprinkle)

cinnamon (a sprinkle)

vanilla (1 tsp)

coconut oil (1/4 cup, melted)

honey (1/4 cup)

dried fruit (chopped into small pieces if needed)


Preheat oven to 350. Line a baking sheet with tin foil or parchment paper. MIx your oats, nuts & seeds, cinnamon and salt together in the pan. Add the coconut oil, honey, and vanilla, and mix around until everything is coated. Spread out the granola in a flat layer on the pan, but make sure that it is in an even layer and there are no gaps of empty space.

When the oven is preheated, put the granola in. It will start to smell heavenly in about 4 minutes. After 10 minutes, take the granola out and stir it around with a spatula or wooden speen. It should be slightly golden brown at this point. Pat it down back into a flat layer (no gaps!) and put it back in the oven for the remaining ten minutes.

At this point your whole house should smell like winnie the poo knocked over his honey pot onto a pile of warm, candied cinnamon sugar nuts. When time is up, take out the pan and let it cool completely before you touch it again (an hour or two). When it is cool, break up the granola with your hands. You might have to peel it off the tin foil if it's stuck (mine was). Add your dried fruit. Your granola will keep in the pantry for about two weeks (according to numerous websites but its only been 2 days for me so I'm not really sure yet).
